These 15 Minute Garlic Lime Cashew Zoodles never fail to satisfy all my cravings! I am so excited to share this recipe with you today because I am sure that you are going to love it! Dinner will be awesome again with this delicious dish! By the way, make sure not to overcook the veggies. The texture is everything in this dish. You want a bit of crunch in each bite of the zoodles.
Ingredients:
2 large carrots peeled
2 medium zucchinis
1 tbsp fresh cilantro, chopped
¾ c cashews
Sauce:
½ tbsp hoisin sauce
1 tsp soy sauce
2 cloves garlic, minced
2 heaping tbsp peanut butter
½ tbsp sriracha sauce (or more if you like it spicy!)
Juice of ½ lime
Directions:
Use a spiralizer to thinly slice the zucchini and carrots.
Place a large skillet on the stove and turn the heat to medium-high.
Add hoisin sauce, soy sauce, peanut butter, garlic, lime juice, and sriracha into the skillet. Stir until well blended. Cook for 2 minutes or until the garlic is aromatic.
Add the carrots, cashews, and zucchini. Toss everything until well mixed. Cook for about 4 to 5 minutes.
Add cilantro, then toss everything until well mixed.
Serve right away and enjoy!
Note:
Make sure to keep an eye on the dish while cooking. You don’t want to overcook the veggies.
