These Drunken Noodles are super legit! If you are a huge fan of noodles, you have got to give this one a try! It is very easy to cook, trust me!
Ingredients:
Noodles:
7 ounces /200g dried rice noodles, wide
Stir Fry:
2 tablespoons oil (peanut, vegetable or canola)
3 large cloves of garlic, minced
2 birds eye chilli or Thai chillies, deseeded, very finely chopped
½ onion, sliced
200 grams /7ounces chicken thighs, cut into bite-size pieces (breast ok too)
2 teaspoons fish sauce (Or soy sauce)
2 green onions cut into 3cm/2″ pieces
1 c Thai or Thai Holy Basil leaves
Sauce:
3 tablespoons oyster sauce
1 ½ tablespoons light soy sauce
1 ½ tablespoons dark soy sauce
2 teaspoons sugar
1 tablespoon water
Directions:
Step 1: Prepare the noodles and refer to the directions provided on the package.
Step 2: In a small mixing bowl, add all the ingredients for the sauce. Stir until well combined.
Step 3: Place a large skillet or wok on the stove and turn the heat to high.
Step 4: Add in oil and allow it to become hot.
Step 5: Add in the garlic and chilli, and then cook for about 10 seconds.
Step 6: Add in the onion and cook until translucent and aromatic.
Step 7: Add in the chicken and season it with fish sauce, then cook for about 2 minutes or until done.
Step 8: Add in the noodles, sauce, and green onions, then cook for another minute or until well combined.
Step 9: Remove from the heat.
Step 10: Add basil and toss until well combined.
Step 11: Serve and enjoy!
