Who wouldn’t love this recipe? It is what I imagine just by hearing the name. Drinking Coca-Cola soda pop is a religion in the deep South. It is such a staple of the Southern culture that most Southerners refer to Coca-Cola and all soda pop as simply “Coke.” Because of this passion for Coca-Cola, it seems inevitable that the Double Chocolate Coca Cola Cake also has its roots in the South. Going to church gatherings or family reunions is very popular, and having a Double Chocolate Coca Cola Cake on the dessert side of the buffet table.
This Double Chocolate Coca Cola Cake became my favorite in an instant, a regular staple for social gatherings and celebrations. A moist and rich chocolate sheet cake. The addition of the cola adds extra sweetness, and the carbonation adds an airiness to the cake’s texture. Since I love chocolate, I was ready to dive in headfirst to try this cake. Ingredients:
1 c coca-cola (not diet)
½ c cooking oil
(1) stick butter
3 Tbsp cocoa
2 c sugar
2 c plain flour
½ tsp salt
(2) eggs
½ c buttermilk
1 tsp baking soda
1 tsp vanilla
For frosting ingredients:
(1) stick butter
2 ⅓ Tbsp cocoa
6 Tbsp cream or milk
1 tsp vanilla
3 ¾ c confectioners sugar
Directions:
In a saucepan, add and mix cola, oil, butter, and cocoa and bring to boil. In a bowl, combine sugar, flour, and salt. Add and pour Cola mixture over the flour mixture and beat well.
Add eggs, buttermilk, baking soda, and vanilla and beat well. Add and pour the mixture into a greased and floured 13×9 inch baking pan. Then bake for 20 to 25 minutes at 350 degrees.
In a saucepan, add and combine butter, cocoa, and milk. Heat until butter melts. Add and beat in remaining ingredients and spread on cake while still warm.
