Ingredients:
For the cake:
½ c unsweetened dark chocolate cocoa powder
½ tsp kosher salt
½ c strong brewed coffee cooled
2 large Eggs
½ c unsalted butter softened
1 tsp baking soda
½ c milk
½ tsp baking powder
1 ½ c granulated sugar
1 ½ c all-purpose flour
For the cream filling:
1 tsp vanilla extract
1 c unsalted butter, softened
1 c granulated sugar
1 c milk
5 tbsp all-purpose flour
For the ganache:
1 ¼ c heavy whipping cream
1 bag (12 ounces) semi-sweet chocolate morsels
Directions:
For the cake:
Apply cooking spray in two 9-inch cake pans.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add cocoa, flour, baking soda, baking powder, and salt into a mixing bowl. Whisk until well blended.
Add milk and cooled coffee into a cup, then stir until well blended.
In another bowl, add sugar and butter. Beat until well blended.
Add eggs gradually and beat every addition until well blended.
Add the dry ingredients gradually and beat until the texture becomes smooth.
Fill each of the prepared pans with the batter and spread it evenly.
Place them inside the preheated oven and bake for about 25 minutes or until done.
Remove from the oven and allow the cakes to cool at room temperature.
For the Cream Filling:
Place a pan on the stove and turn the heat to medium.
Add milk and flour, then whisk until well blended. Cook for a few minutes until the texture turns into a pudding.
Remove the pan from the stove, then add vanilla and stir until well blended. Allow it to cool at room temperature.
Add sugar and butter into a mixing bowl, then beat until well blended.
Add the cooled milk mixture, then stir until well blended.
For the Ganache:
Add heavy cream and semi-sweet chocolate into a heat-proof bowl. Stir until well blended.
Place it inside the microwave and heat for about a minute.
Remove from the microwave, then stir until the texture becomes smooth.
To Assemble:
Put a cake onto a plate, then add the cream filling on top and spread it evenly.
Place the second cake over the cream filling layer.
Pour the ganache on top of the cake, then spread it evenly until the cakes are well coated.
