This is an amazing chicken dinner with tender, juicy chicken thighs smothered in a delightful sauce and topped with whole garlic cloves! See notes for options, especially if you are looking to make this a no-fuss one-pan meal.
Ingredients
20 cloves garlic, peeled
1 ½ lbs bone-in and skin-on chicken thighs (4-6 thighs)
1 tbsp oil
1 onion, diced
salt and pepper to taste
2 tsp fresh thyme, chopped (or 1 tsp dry thyme)
2 tbsp flour
½ c. asiago cheese (or Parmesan), grated
1 c. chicken broth
salt and pepper to taste
How to make Rustic Roasted Garlic Chicken with Asiago Gravy
Step 1: In a large skillet, heat the oil over medium-high heat. Once hot, add the chicken that has been seasoned with salt and pepper. Sear for about 3 to 5 minutes on each side until brown. Set aside.
Step 2: In the same skillet, saute the onion and garlic for about 3 to 5 minutes or until the onions have softened and the garlic is light brown. Add the thyme along with the flour. Stir and continue to cook for another minute.
Step 3: Pour in the broth and scrape the bottom of the pan using a spoon to release the browned bits.
Step 4: Into the sauce, add the asiago, and stir. To taste, season with salt and pepper.
Step 5: Return the chicken to the pan. Put the lid on and the tent with foil. Place in a preheated 400 degrees F or 200 degrees C oven and roast the chicken for about 15 minutes. Alternatively, you can continue to cook this on the stove for another 15 minutes on medium-low heat.
Notes:
You can cook this in your slow cooker. Do steps 1 to 5, placing everything in your slow cooker and cooking for 4 to 10 hours on low or 2 to 4 hours on high. Into the broth, whisk the flour before stirring in the slow cooker.
There are tons of options for this recipe. You can cook 4 strips of bacon. Set them aside when dining and cook the onion in the bacon grease. When done, crumble the bacon and add to the onion. After roasting, add this to the sauce.
You can make this a one-pan meal. Just add 8 oz of pasta with 2 ¼ c. of broth or water to the sauce in step 4. Let this simmer for about 12 minutes, covered, until the rice is cooked.
If desired, you can add 1 tbsp of white miso paste to the sauce.
You can also add a splash of lemon juice to the sauce.
Or add half a cup of cream to the sauce.
You can even add a half pound of sliced mushrooms along with the onions.
If you want to add veggies, you can do so by adding some diced potatoes and carrots to the pan. On top, place the chicken and roast for about 20 to 30 minutes until the veggies are tender.
