Ingredients:
2 Garlic Cloves
1 tbsp Oil
6-7 Boneless Skinless Chicken Thighs
1 tbsp butter
2-3 sprigs of Fresh Rosemary
¼ c Chicken Stock
For the Spice Rub:
1 tsp Garlic Powder
½ tsp Chili Powder
¼ tsp Black Pepper
2 tbsp Light Brown Sugar
½ tsp Smoked Paprika
½ tsp Onion Powder
½ tsp Salt
Directions:
Add all the ingredients for the spice rub into a mixing bowl. Whisk until well incorporated.
Use paper towels to pat dry the chicken thighs.
Sprinkle the dry ingredients over the chicken thighs, then rub each until well coated.
Place a heavy cast-iron skillet on the stove and turn the heat to medium.
Add oil and butter, then allow it to become hot.
Add the garlic into the hot skillet and sauté for a minute or until aromatic.
Add the chicken thighs, then cook each side for a few minutes until golden brown.
Gradually add the chicken stock and stir every addition until well blended. Scrape the bottom of the skillet to get the browned bits. They will give amazing flavors!
Add the rosemary sprig, then stir until just blended.
Cover the skillet with the lid, then cook the chicken thighs for 2 more minutes over high heat.
Remove the cover and simmer for another minute or until the texture of the sauce becomes thick.
Serve over rice with veggies on the side. Enjoy!
