Do you want to eat a low-carb quiche? Well, this is your lucky day because this recipe I am sharing with you happens to be low-carb and extremely delicious! Eat this for breakfast, and I promise you that your day is going to be awesome. Enjoy!
Ingredients:
1 tablespoon cooking oil, divided
4 large Eggs
¼ c grated Parmesan
1 c milk
½ c shredded mozzarella
8 ounces mushrooms
¼ teaspoon pepper
1 clove of garlic, minced
2 ounces feta cheese
⅛ teaspoon salt
1 10-ounce box of frozen chopped spinach
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Squeeze the thawed spinach to remove most of the liquid contents.
Mince the garlic and clean the mushrooms with water to remove any dirt. Slice them into thin cuts.
Place a skillet on the stove and turn the heat to medium.
Add ½ tbsp of cooking oil and allow it to become hot.
Add the mushroom slices and minced garlic into the hot skillet, then sauté for a few minutes until soft and aromatic. Make sure that mushrooms have dried out. Add salt to season.
Apply cooking spray to the inside of a 9-inch pie plate.
Arrange in layers the sauteed mushrooms/garlic, spinach, and crumbled feta into the prepared pie plate.
Whisk Parmesan cheese, milk, pepper, and eggs into a mixing bowl until well blended.
Pour evenly the egg mixture on top of the crumbled feta on the pie plate.
Sprinkle shredded mozzarella cheese over the egg mixture layer.
Place the pie plate inside the preheated oven and bake the quiche for about 50 minutes or until the top turns golden brown.
Remove the quiche from the oven.
Serve right away. Enjoy!
