Sausage and potatoes in one serving! This dish is ready in just 20 minutes. You will not be disappointed by this recipe at all. Enjoy
Ingredients:
4 tbsp olive oil (or butter, or ghee)
2 tsp Italian seasoning
Grated Parmesan, optional
½ tsp red chili pepper flakes, or to taste
1 red bell pepper, sliced
1 ½ pound (650g) small baby potatoes, quartered
Salt and fresh cracked pepper
¼ c (60ml) low-sodium chicken stock (or beef, vegetable)
½ tsp minced garlic
1 tsp hot sauce of your choice
1 pkg smoked sausage
Chopped parsley for garnish
1 onion, minced
Directions:
Put a large skillet on the stove and turn the heat to medium-high. Add 3 tbsp of oil and allow it to become hot.
Add the potatoes into the hot skillet, then sear them for about 10 minutes or until golden brown. Sprinkle salt and pepper on top to season. Move them onto a clean plate.
In the same skillet, add the sausage and cook for a few minutes.
Add bell pepper, red pepper flakes, garlic, onion, Italian seasoning, pepper, and salt. Sauté for a few minutes until soft and aromatic.
Pour in ¼ cup of stock and hot sauce, then scrape the bottom of the skillet to get the browned bits. Stir everything until well incorporated.
Put the potatoes back into the skillet, then toss until well coated with the sauce. Taste and add seasonings if needed.
Remove from the heat. Sprinkle freshly chopped parsley on top.
Top each serving with grated Parmesan cheese if you wish.
Serve and enjoy!
Notes:
Make sure to boil the potatoes first before searing them. The cooking time is about 8 minutes. Just until fork-tender.
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 5 days. Reheat for a few minutes before serving again.
