Super tender chicken smothered in a delicious sauce and cooked to perfection! This recipe may take you 6 hours to prepare and cook, but I promise you that it is worth the wait. All you need are these easy steps and simple ingredients, and you are good to go. This recipe yields 8 servings. There will be plenty for everybody. Enjoy!
Ingredients:
1 c shredded cheddar cheese
1 (11 ounces) can of corn, drained
1 (8 ounces) package of cream cheese
1 (10 ounces) diced tomatoes and green chilies, undrained
1 teaspoon onion powder
1 teaspoon cumin
2 boneless and skinless chicken breasts
1 (1 ounce) packet ranch seasoning & salad dressing mix
1 tablespoon chili powder
1 c cooked chopped bacon
1 (15 ounces) black beans, drained and rinsed
2 c chicken broth
Directions:
Lay the chicken breasts into the slow cooker and arrange them in a single layer.
Add sliced tomatoes, green chilis, bacon, onion powder, chili powder, corn, ranch seasoning, chicken broth, and cumin. Stir everything until well incorporated.
Add cream cheese over the chicken breasts and spread it evenly.
Cover and seal the slow cooker. Cook everything for about 6 to 8 hours on a low setting or until the chicken is fork-tender.
Transfer the chicken onto a clean plate, then use two forks to shred them into small cuts.
Put the shredded chicken back into the slow cooker, then stir until well coated with the sauce.
Add cheddar cheese, then stir until melted completely and well blended.
Serve hot and enjoy!
Notes:
I used Philadelphia brand cream cheese for this recipe.
Place any leftovers in an airtight container, then place them inside the fridge.
