Ingredients:
2 tbsp olive oil
1 lb. of baby red potatoes, cut in half
4 sprigs thyme
4 chicken thighs, bone-in, about 1 to 1 ½ lb.
1 ½ c carrots, 1-inch pieces
1 ear of corn, cut into 4 pieces
1 ¼ c unsalted chicken stock
3 tbsp all-purpose flour
2 tbsp garlic, roughly chopped
1 tsp kosher salt, plus more for seasoning
¼ tsp black pepper, plus more for seasoning
2 sprigs rosemary
1 tbsp lemon juice, plus 4 wedges for serving
1 c red onion, 1-inch dice
Directions:
Remove any excess fat and skin from each chicken thigh, then season them with salt and pepper.
Place a large skillet on the stove and turn the heat to medium-high. Add 2 tbsp of olive oil and allow it to become hot.
Add the chicken thighs with the skin facing down into the hot skillet, then sear one side for about 5 minutes or until they turn brown.
Flip the chicken thighs over, then cook the other side for another 2 minutes. Transfer them onto a clean plate.
In a slow cooker, add garlic, onion, potatoes, carrot, and corn. Stir everything until just mixed.
Meanwhile, add chicken stock, lemon juice, flour, ½ tsp pepper, and 1 tsp salt into the skillet. Scrape the bottom of the skillet to get the browned bits. Stir until well blended, then pour the mixture into the slow cooker.
Place the chicken thighs into the slow cooker over the mixture, then sprinkle rosemary and thyme on top.
Cover and seal the slow cooker, then cook everything for about 2 to 4 hours on a high setting or 4 to 6 hours on a low setting.
