Baked to perfection, this Shepherd’s Pie is the ultimate family food! The combination of ground beef, mashed potatoes, and veggies are just too perfect! This recipe is a must-try indeed. Enjoy!
Ingredients:
Mashed Potato Topping:
4 tbsp butter
¼ c sour cream
¼ to ½ c milk
2 lbs. potatoes, peeled and cut into big chunks
salt and pepper to taste
Filling:
1 tbsp Worcestershire sauce
1 tbsp tomato paste
2 tbsp flour
1 lb. ground beef
2 cloves garlic, minced
1 tsp rosemary
½ tsp thyme
1 bay leaf
½ c beef broth
1 small onion, diced
2 c frozen peas, carrots, and corn medley
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a large pot with enough water to submerge the potatoes on the stove and turn the heat to high. Allow the water to boil.
Add potatoes into the boiling water, then cook for a few minutes until fork-tender. Drain.
In a large mixing bowl, add boiled potatoes, butter, sour cream, milk, salt, pepper, and sour cream. Mash everything until well incorporated.
Place a large skillet on the stove and turn the heat to medium.
Add the ground beef, then cook for a few minutes or until crumbly and brown.
Add the onions, then sauté for a few minutes until soft. Discard any accumulated grease from the ground beef.
Add 2 cups of frozen veggies into the skillet, then stir and cook for a few minutes. This usually takes about 5 minutes.
Add flour, then whisk and cook for a minute.
Add tomato paste, then stir and cook for another minute.
Add thyme, bay leaf, Worcestershire sauce, beef broth, and rosemary. Stir everything until well blended. Let it simmer.
Turn the heat down to low, then cook everything for 10 minutes.
Transfer the mixture to a 9×13-inch baking dish and spread it evenly. Discard the bay leaf.
Add the mashed potatoes over the meat and spread it evenly. Make sure to cover the meat layer.
Bake the pie in the preheated oven for 30 minutes or until done.

You can broil this for about 2 minutes if you prefer.
