I love this oven-baled chicken and rice. It is a wonderful one-pot recipe that you can easily make at any time. A mess-free dinner that takes a little prep work. Juicy and tender oven-baked chicken, fluffy rice, and packed with amazing flavors. This dish no doubt exceeded all expectations!

Ingredients
2 garlic cloves, minced
5 bone-in chicken thigh fillets, skin off
1 onion, chopped
2 tablespoons butter, cut Into pieces
1 ½ c. chicken stock
1 ½ c. uncooked white rice (long-grain, jasmine, or basmati work great)
Fresh chopped parsley for garnish
1 ¼ c. water
Oil spray
CHICKEN RUB:
½ teaspoon onion powder
1 teaspoon paprika
½ teaspoon garlic powder
¾ teaspoon salt
Black pepper
1 teaspoon dried thyme
How to make Oven Baked Chicken and Rice
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Scatter the onion in a 9 x 13-inch baking dish. On top, cut the butter into pieces.
Step 3: Place in the preheated oven and bake for about 15 minutes or until some of the pieces of onion have browned.
Step 4: To make the chicken rub, mix the chicken rub ingredients. On both sides of the chicken pieces, rub the spice mix.
Step 5: On top of the baked onions, place the rice and mix well. Then, add the chicken stock along with the garlic and water.
Step 6: On top of the rice mixture, place the pieces of chicken.
Step 7: Using foil, tent the dish and place it in the preheated oven. Bake for about 30 minutes. After 30 minutes, remove the cover. Using oil spray, grease the thighs. Return to the oven and bake for another 20 minutes.
Step 8: Take the dish out of the oven and serve the chicken and rice immediately. Enjoy!
