Ingredients:
Mongolian Beef Ingredients:
4 stalks of green onion, green part only, cut into 2-inch pieces
3 bell peppers, cut into strips
½ c cornstarch
½ c neutral oil
1 large onion, cut into ¼ rings
2 pounds beef stew tips, flank steak, New York strip steak (extra fat trimmed), cut against the grain into thin strips
Mongolian Beef Sauce Ingredients:
½ c brown sugar
½ c low sodium soy sauce
1 teaspoon Sriracha sauce (add more or less for the desired spiciness)
2 teaspoons ginger powder (or double the amount if using freshly grated ginger)
½ c water
4-5 garlic cloves, minced
Directions:
Mongolian Beef:
Add the 2 pounds of meat and ½ cup of cornstarch into a large ziplock bag. Seal the bag and shake it to coat the meat with cornstarch.
Place a large skillet on the stove and turn the heat to high.
Add oil and swirl it around to cover the bottom and sides. Allow it to become hot.
Add the bell peppers, then sauté for 3 minutes or until soft. Transfer onto a clean plate.
Add the onions into the same skillet and sauté for 3 minutes as well or until soft. Transfer onto the plate with the bell peppers.
Add oil into the same skillet and allow it to become hot.
Add the beef strips in batches, then cook each side for about a minute or until brown. Transfer them onto a clean plate. Repeat the process with the rest of the beef strips.
Mongolian Sauce:
In the empty skillet, add 2 teaspoons of ginger powder, ½ cup of water, ½ cup of soy sauce, and ½ cup of brown sugar, 4 cloves of garlic. Stir until well blended. Don’t forget to scrape the bottom of the skillet to get the browned bits. Allow the mixture to boil for a few minutes.
To Assemble:
Add the beef strips back into the skillet, then toss until well coated with the delicious sauce. Allow the mixture to boil again.
Put the sauteed veggies back into the skillet as well, then stir until well coated with the sauce as well.
