Ingredients:
1 ½ c salsa
1 c taco sauce
20 jumbo pasta shells (about 6 oz.)
1 package of low-sodium taco seasoning
1 c cheddar cheese (or just use all of one kind of cheese)
1 c Monterrey jack cheese
1 lb. ground beef (or ground turkey)
4 oz. cream cheese
For the Toppings:
Sour cream
3 green onions
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium-high.
Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the taco seasoning, then stir until well blended. Refer to the directions provided on the package of it on how to prepare it.
Add the cream cheese, then stir until well blended.
Cover the skillet with the lid and simmer the mixture until the cheese has completely melted.
Remove the skillet from the heat and allow it to cool for a few minutes.
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta shells and a bit of salt into the boiling water, then cook them for a few minutes until al dente. Drain and place them separately onto a flat surface.
Add the salsa to a 9×13-inch baking dish and spread it evenly.
Stuff each of the prepared shells with about 2 tbsp of the meat mixture.
Place them into the prepared baking pan and arrange them in a single layer.
Pour the taco sauce on top of the stuffed shells. Make sure to fully cover them.
Cover the baking pan with aluminium foil.
Place it in the preheated oven and bake the Mexican Stuffed Shells for about 15 to 20 minutes.
Remove the cover, then sprinkle the shredded cheese on top.
Bake for another 5 to 10 minutes or until the cheese has melted completely.
Remove from the oven and sprinkle chopped green onions on top to garnish.
Serve right away with salsa or sour cream. Enjoy!
