INGREDIENTS
3 cloves garlic, minced
1 lb boneless, skinless chicken breasts, cubed
1 tbsp olive oil
1 yellow onion, diced
2 bell peppers, diced (you can also use red, green, yellow, etc.)
2 celery ribs, diced
¼ tsp sweet paprika
1 tsp oregano
salt and fresh ground pepper, to taste
2 tbsp tomato paste
6 oz. andouille sausage, sliced into ¼-inch rounds
2 c. low-sodium fat-free chicken broth
1 (14.5 ounces can) diced tomatoes
1 tsp Cajun seasoning, or to taste
1 lb shrimp, peeled and deveined
1 c. long grain rice
dried parsley, for garnish
2 green onions, thinly sliced, for garnish
How to make Jambalaya
Step 1: Heat the olive oil in a large Dutch oven over medium heat. Once hot, add the onions along with the celery and bell peppers. Then, season with salt and pepper. Saute for about 4 minutes until just tender. Next, add the garlic and continue to cook for another minute.
Step 2: Add the chicken to the pot along with the sweet paprika and oregano. Cook for additional 5 minutes or until all sides of the chicken are brown.
Step 3: Add the prepared sausage and tomato paste. Stir and cook for a minute more.
Step 4: Pour in the chicken broth and add the crushed tomatoes, rice, and Cajun seasoning. Bring everything to a boil. Once boiling, adjust the heat to medium-low and put the lid on.
Step 5: Cook further until the rice is tender and most of the liquid is absorbed. This takes another 20 minutes.
Step 6: Next, add the shrimp and continue to cook for additional 4 to 5 minutes or until the shrimp is pink and completely cooked.
Step 7: Take the pot off the heat when done and serve the Jambalaya immediately, garnished with some sliced green onions and dried parsley. Enjoy!
