Ingredients:
1 (8 oz) package of cream cheese
1 tbsp garlic powder
3 skinless, boneless chicken breast halves
1 tsp cayenne pepper
½ tsp ground cumin
8 oz. shredded Monterey Jack cheese, divided
2 jalapeno peppers, seeded and minced (wear gloves)
1 (28 oz) can of green enchilada sauce
½ tsp garlic powder
1 large onion, minced
½ tsp paprika
½ tsp chili powder
2 tbsp butter
7 flour tortillas
salt and ground black pepper to taste
½ tsp cayenne pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Sprinkle salt, pepper, ½ tsp garlic powder, and 1 tsp cayenne pepper over the chicken. Rub until well coated and lay into a baking dish.
Place the chicken in the preheated oven and bake for 45 minutes or until done. Remove from the oven, then use two forks to shred into small pieces.
Place a large nonstick skillet on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the jalapenos and onion, then sauté for 5 minutes or until soft.
Add the cream cheese and let it melt. Add cumin, garlic powder, cayenne pepper, chili powder, and paprika. Stir until well blended.
Add the chicken meat, then stir until well incorporated. Remove the skillet from the heat.
Add ½ of the green enchilada sauce into a 9×13-inch baking dish and spread it to the bottom.
Arrange the tortillas over the sauce in a single layer.
Spoon the chicken mixture in the middle of each tortilla. Top each with 1 tbsp of Monterey Jack cheese, then roll it up.
Spread the rest of the sauce on top of the enchiladas, then top them with 4 ounces of Monterey Jack cheese.
Place the baking dish in the preheated oven and bake the tortillas for about 30 to 35 minutes or until the cheese has melted completely.
Remove from the oven. Serve and enjoy!
