Ingredients:
Greek Chicken & Marinade:
½ teaspoon thyme
1 tablespoon white wine vinegar
1 teaspoon kosher salt use half if not using Kosher Salt
1 teaspoon garlic powder
2 tablespoons olive oil, plus 1 teaspoon for cooking
1-½ lbs. fresh chicken breast, sliced in half to make thinner
½ teaspoon black pepper
3 tablespoons lemon, juice of one lemon
2 tablespoons oregano
Greek Cucumber Salad & Rice:
23 Kalamata olives, sliced in half, black olives will work too
4 Roma tomatoes’ flesh removed, chopped
½ c crumbled feta cheese
1 teaspoon oregano, dried
2 c white rice, cooked salted & peppered to taste
2 tablespoons white wine vinegar
1 tablespoon olive oil
pepper to taste
1 teaspoon garlic powder
¼ teaspoon dill weed, dried
1 teaspoon Kosher salt to taste if not using kosher salt
¼ small red onion, diced small
2 c chopped cucumber English cucumber or baby cucumbers
Directions:
Add all the ingredients for the marinade to a large resealable bag. Seal the bag and shake it until everything is well blended.
Put the chicken in the bag, then seal and shake it again until the chicken pieces are well coated with the marinade.
Place the bag in the fridge and allow the chicken to marinate for at least 30 minutes or overnight. Remove the chicken from the bag.
Place a large skillet on the stove and turn the heat to medium.
Add 1 teaspoon of oil and allow it to become hot.
Put the chicken, then sear each side for about 4 minutes or until they turn brown.
Transfer the chicken onto a clean plate and slice it into small cuts.
In a mixing bowl, add all the ingredients for the cucumber salad. Stir everything until well incorporated.
Serve the chicken over rice with ¾ cup of cucumber salad on the side. Enjoy!
