½ tsp salt
½ tsp pepper
1 tbsp olive oil
1 lb. Yukon Gold potatoes, diced into ½-inch cubes
1 tsp dried oregano
1 tsp dried rosemary
4 garlic cloves, minced
4 tbsp butter, divided
Freshly chopped parsley for garnish optional
Directions:
Place a cast-iron skillet on the stove and turn the heat to medium-high.
Add olive oil and 2 tbsp of butter, then allow them to become hot.
Add garlic, rosemary, potatoes, salt, pepper, and oregano into the hot skillet. Cook for about 4 minutes, then stir and cook for 3 more minutes or until the potatoes are tender. Transfer the potatoes into a mixing bowl.
Turn the heat up to high, then add 2 tbsp of butter and allow it to melt.
Add the steaks, then cook for about 1 to 2 minutes on both sides. Remove the skillet from the stove.
Put the potatoes back into the skillet, then toss until well combined. Season with more salt and pepper if needed.
Sprinkle freshly chopped basil on top to garnish.
Serve right away and enjoy!
Notes:
Feel free to use New York strip steak or beef tenderloin for this recipe if you wish.
Feel free to use Yukon gold potatoes for this recipe as well in exchange for fingerling potatoes and red-skinned potatoes.
I do not recommend Russet potatoes for this recipe.
