Ingredients:
½ tsp red pepper flakes
½ c canola oil
⅓ c cornstarch
1 lb. chicken thighs, cut into 1-inch chunks
3 cloves garlic, minced
1 tbsp ginger, minced
Sauce:
½ c water
½ lemon, juiced
1 tbsp cornstarch
2 tbsp soy sauce
½ c honey
zest of one large lemon
Garnish:
lemon zest
green onions
sesame seeds
Directions:
Add the chicken thighs and cornstarch into a large bowl. Toss the chicken until well coated.
In a mixing bowl, add all the ingredients to the sauce. Whisk until well blended.
Put a large pan on the stove and turn the heat to medium-high.
Add vegetable oil and allow it to become hot.
Add the chicken, then fry each side until golden brown. Move the chicken onto a clean plate.
Leave 1 tbsp of the oil in the pan and remove the rest of it.
Add garlic, red pepper flakes, and ginger. Sauté for a few minutes until aromatic.
Put the chicken back into the pan, then toss until well combined.
Pour in the sauce over the chicken, then toss again until well coated. Scrape the bottom of the pan to get the browned bits.
Simmer the mixture for about a minute or two, just until the sauce becomes thick.
Remove the pan from the stove, then sprinkle lemon zest, green onions, and sesame seeds on top.
Serve right away with rice. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last up to 4 days. Reheat in the microwave for a few minutes before serving again.
