Ingredients:
For The Chicken:
2 tsp Garlic powder
2 tbsp Unsalted butter
4 tbsp Fresh grated Pecorino Romano cheese
2-3 Chicken breasts (skinless and halved horizontally to make 4-5)-
4 tbsp All-purpose flour
3 tbsp Vegetable oil
1 tsp Ground black pepper
2 tsp salt
For The Sauce:
1 Onion (finely chopped)
2 tbsp or as needed Fresh parsley (finely chopped)
1 ¼ c Chicken stock or broth
13-14 Garlic cloves, crushed
½ c Fresh grated Pecorino Romano cheese
1 ¼ c Half & half or heavy cream
Directions:
Use paper towels to pat dry the chicken fillets. Sprinkle garlic powder, salt, and black pepper on top of them.
In a mixing bowl, add the Pecorino Romano cheese and flour. Whisk until well incorporated.
Add the chicken fillets into the bowl with cheese mixture, then toss until well coated. Remove any excess coating.
Place a skillet on the stove and turn the heat to medium-high. Add butter and oil, then allow them to become hot.
Place the coated chicken fillets into the hot skillet. Cook each side for about 5 minutes or until they turn golden brown.
Transfer onto a clean plate.
In the same skillet, add the onion and sauté for a few minutes until soft. Add garlic and sauté for about a minute or until aromatic.
Add chicken stock, then scrape the bottom of the skillet to get the browned bits. Stir everything until well blended. Reduce the heat to medium-low, then simmer for 3 minutes.
Stir in half & half and allow the mixture to simmer for 2 more minutes.
Stir in the Pecorino Romano cheese until completely melted.
Put the chicken fillets back into the skillet, then toss until coated with the sauce. Sprinkle freshly chopped parsley on top.
