Ingredients:
2 tbsp butter
3 medium boneless, skinless chicken breasts
2 tbsp olive oil
salt and pepper to taste
2 tsp Italian blend seasoning – OR Herbs de Provence
½ lb. baby potatoes – halved or quartered as needed (they should be no larger than 1-inch pieces)
For the Dijon Cream Sauce:
2 tbsp Dijon mustard
¼ tsp cracked black pepper – or to taste
1 c chicken broth – I used low sodium
1 tbsp butter
½ tsp salt – or to taste
1 tsp minced garlic
1 c heavy cream
Directions:
Add the chicken and potatoes into a large mixing bowl.
Drizzle 1 tbsp of olive oil, Italian seasoning blend, and a generous amount of salt, and pepper over the chicken and potatoes, then toss until well coated.
Place a large skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add olive oil and stir until well blended with the melted butter.
Place the chicken and potatoes on separate sides of the skillet, then cook each side for about 4 minutes or until they turn brown. Transfer them onto a clean plate. Cover with foil to keep the chicken and potatoes warm.
For the Sauce:
Add the butter into the empty skillet and allow it to melt.
Add the garlic, then sauté for about a minute or until aromatic.
Add the Dijon mustard and chicken broth, then stir until well blended.
Add the heavy cream and stir until well blended. Season with salt and pepper to taste.
To Assemble:
Put the potatoes and chicken back into the skillet, then toss until well coated by the delicious sauce.
Move the skillet inside the preheated oven and bake for about 15 to 20 minutes or until done.
Spoon the delicious sauce over.
Sprinkle herbs and black pepper on top to garnish.
