This Cheesy Sausage Potato Soup is so heartwarming. You will surely love a bowl of this delicious treat! It is cheesy, thick, and just pure love! This is something you can eat pretty much any time of the day!
Ingredients:
2 c milk any percentage
½ c finely diced onion
¼ c and 1 tablespoon (44g) all-purpose flour
2 celery ribs, diced small
1 tbsp olive oil
1 14 oz. smoked sausage, chopped into ½-inch pieces
5 tbsp (71g) butter salted or unsalted is fine
3½ c (about 2 large) russet potatoes, peeled and diced medium
4 c (2 15-ounce cans) of chicken broth
6 oz (about 1½ cups) shredded cheddar cheese, plus more as desired for topping
Sour cream, optional for topping
¼ tsp black pepper
Salt
3 garlic cloves, minced or pressed
Directions:
Place a large pot on the stove and turn the heat to medium. Add olive oil and allow it to become hot.
Add sausage into the pot, then cook for a few minutes until brown and transfer them into a mixing bowl.
In the same pot, add the onions and sauté for 5 minutes or until soft. Add garlic, then sauté for a minute or until aromatic.
Add celery, chicken broth, and potatoes. Simmer for about 10 minutes or until the potatoes are fork-tender. Mash ½ of the potatoes in the pot.
Place another pot on the stove and turn the heat to medium. Add butter and allow it to melt.
Add flour, then whisk and cook for a minute to remove the raw taste.
Add milk, then whisk and cook for 5 minutes or until smooth.
Turn off the heat. Add cheese and stir until completely melted.
Transfer the cheese sauce into the pot with the soup, then stir until well blended. Sprinkle salt and pepper to taste.
Put the sausage back into the pot, then stir until well incorporated. Remove from the heat.
Top each serving with cheese and sour cream.
