This Pork Carnitas recipe is what I like to call perfection! It may take 6 hours to cook but I promise you that it is worth all your time effort! Ingredients:
6 cloves garlic minced
1 onion
1 lime
3-4 lbs pork loin
1 orange
kosher salt, pepper, crushed red pepper flakes
½ can of beer
2 bay leaves
1 tablespoon each chilli powder, paprika, and cumin
Directions:
Slice the pork into 6 portions.
Add the pork slices into the crockpot and arrange them in a single layer.
Squeeze the lime and orange over the pork slices. Toss until well coated.
Scatter the onion slices over the pork.
Add bay leaves, cumin, paprika, chilli powder, garlic, crushed red pepper flakes, salt, and pepper. Stir until just blended.
Pour in ½ can of the beer.
Cover the pot, then cook everything for about 6 hours on a low setting.
Line with parchment paper onto a baking sheet.
Transfer the pork slices onto the prepared baking sheet. Use two forks to shred them into small pieces.
Spoon ½ of the sauce from the pot over the shredded pork and spread it evenly.
Put it inside the oven and broil for 5 minutes or until done.
Remove the pan from the oven, then pour the remaining sauce over. Toss until well coated.
Put it back inside the oven and cook the pork for another 5 minutes.
Add more seasonings if needed. Make sure to taste it first before adding anything.
Serve with burritos, tacos, and nachos. Enjoy!
