Ingredients:
1 white onion diced
3 pounds beef chuck roast
1 c beef broth
4 ounces tomato paste
1 teaspoon ground cumin
1 tablespoon ground mild chilli powder
½ teaspoon salt
Optional/Toppings
12 tortillas
cotija cheese
cilantro
diced onions
Directions:
In a 6-quart crockpot, add the onions and arrange them on the bottom.
Put the chuck roast on top of the onions.
In a large mixing bowl, add the tomato paste, beef broth, and seasonings. Stir until well combined.
Pour the mixture on top of the chuck roast and spread it evenly.
Cover the slow cooker and cook for about 4 hours on a high setting or 8 hours on a low setting.
Remove the meat from the pot and use two forks to shred it into small pieces.
Add the shredded meat into the bowl with the sauce. Stir until well combined.
Fill each tortilla with the meat mixture and top it each with your preferred toppings.
