This Crock Pot Bourbon Chicken is what I call perfection! If you have a lot of time to spare before lunch or dinner, then you have got to give this recipe a try! Ingredients:
3 tbsp cornstarch
3 pounds boneless skinless chicken thighs
¼ c sliced green onions (or more to taste)
Sauce:
⅓ c apple juice
½ tsp fresh grated ginger
½ tsp crushed red chilli flakes
4 cloves garlic, minced
¼ c water
¼ c ketchup
1 ½ tbsp honey
¼ c brown sugar
¼ c Bourbon
¼ c soy sauce
3 tbsp cider vinegar
salt & pepper to taste
Directions:
In a mixing bowl, add all the ingredients for the sauce. Stir until well blended.
Arrange the chicken thighs into the bottom of the slow cooker.
Pour in the sauce, then cover the slow cooker. Cook for about 6 hours on a low setting or 3 hours on a high setting.
Remove the chicken thighs from the slow cooker, then transfer them onto a cutting board. Chop into small cuts.
In a mixing bowl, add cornstarch and 3 tbsp of water. Stir until well mixed.
Add the slurry into the slow cooker and stir until well mixed.
Put the chicken back in the slow cooker and cook for another 10 minutes or until the texture of the sauce becomes thick.
Add the green onions and stir until well mixed.
Serve hot over rice. Enjoy!
