Ingredients:
Salmon
2 tsp olive oil
3 tbsp butter, melted
4 (6 oz.) centre-cut salmon fillets, skin removed
1 ½ tsp lemon zest
⅔ c panko
1 tbsp Dijon mustard
⅓ c finely grated Parmesan
2 cloves garlic, grated
1 tbsp finely sliced chives
4 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
White Wine Sauce
1 c heavy cream
1 c dry white wine
2 tbsp butter
1 shallot, minced
Lemon wedges, to serve
2 cloves garlic, minced
1 tbsp thinly sliced chives
Directions:
For the Salmon:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Line with parchment paper a sheet tray.
Add Parmesan cheese, panko, garlic, olive oil, lemon zest, and chives into a mixing bowl. Stir until well mixed.
In another mixing bowl, add mustard, grated garlic, and melted butter. Stir until well blended.
Arrange the salmon onto the prepared tray.
Brush each salmon with garlic butter.
Sprinkle salt and pepper on top of the salmon.
Top each with the Parmesan mixture and gently press it to the top.
Place them inside the preheated oven and roast for about 15 minutes or until the top turns golden brown.
Serve with the white wine sauce. Enjoy!
For the White Wine Sauce:
Place a medium saucepan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the garlic and shallot and sauté until aromatic and soft. Sprinkle salt and pepper to season.
Pour in the wine and simmer until it reduces its volume.
Add the cream and stir until well mixed. Simmer for another 3 minutes or until the texture of the sauce becomes thick.
Serve with the salmon.
