Ingredients:
cooking spray
3 quarts cold water
⅓ c balsamic vinegar
¼ c salt
1 bay leaf
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried rosemary
8 cloves garlic, minced
1 pinch salt
3 tbsp olive oil, or as needed
1 tbsp freshly ground black pepper
2 tsp red pepper flakes, or to taste
4 lbs chicken wings, separated at joints, tips discarded
2 tbsp fine bread crumbs
1 c finely grated Parmigiana-Reggiano cheese, divided
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Line with foil a baking sheet, then apply cooking spray on it.
Place a large pot on the stove, then add water, ¼ cup salt, vinegar, oregano, thyme, rosemary, and bay leaf. Stir until well mixed.
Turn the heat to high, then allow the mixture to boil.
Add the chicken wings and cook for about 15 minutes or until done.
Remove the chicken wings from the pot onto a clean plate. Allow them to cool for at least 15 minutes at room temperature.
Add garlic and salt into a mortar. Use the pestle to mash it into a puree.
Transfer the garlic into a mixing bowl, then add olive oil, red pepper flakes, and black pepper. Stir until well mixed.
Add the bread crumbs and chicken wings. Toss until well coated.
Sprinkle a generous amount of Parmigiana-Reggiano cheese on top. About half a cup.
Arrange the chicken wings onto the prepared baking sheet.
Sprinkle more cheese on top.
Place them inside the preheated oven and bake for about 25 minutes or until done.
Remove from the oven and allow them to cool for a few minutes.
Serve and enjoy!
