Ingredients:
24 oz. large raw shrimp, peeled and deveined
Canola oil for frying
Egg Wash
½ teaspoon black pepper
1 c buttermilk (or milk)
2 large Eggs
½ teaspoon kosher salt
Batter
2 teaspoons kosher salt
1 ½ c all-purpose flour
2 teaspoons onion powder
2 teaspoons garlic powder
½ teaspoon black pepper
1 teaspoon cayenne pepper
1 c cornmeal
Dipping Sauce:
½ c sweet chili sauce
¾ c mayo
Directions:
Place a large heavy-duty skillet on the stove and turn the heat to medium. Add ½-inch oil and allow it to become hot.
In a mixing bowl, add buttermilk, eggs, ½ tsp salt, and pepper. Whisk until well blended.
In a separate mixing bowl, add garlic powder, cayenne pepper, salt, pepper, cornmeal, onion powder, garlic powder, and flour. Whisk until well incorporated.
Dredge each shrimp into the bowl with the egg mixture until well coated, then into the bowl with the flour mixture. Shake off any excess. Place it onto a clean plate lined with paper towels. Repeat the process with the rest of the shrimp.
Put the coated shrimp into the hot oil, then fry for about 3 minutes or until they turn golden brown. Transfer onto a clean plate lined with paper towels to drain excess oil.
Serve with the dipping sauce. Enjoy!
For the Dipping Sauce:
Add sweet chili sauce and mayonnaise into a mixing bowl. Stir until well blended.
Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last up to 3 days. Fry for a few minutes just until hot.
