This crispy, cheesy baked broccoli is a great option to make the kids eat their veggies. This recipe is a super simple low-carb recipe. I love to make these Crispy Broccoli Cheese Rounds extra crispy, I added tons of cheese and bake them a little more.
Ingredients
1 large egg
2 c. freshly shredded cheddar cheese (not the pre-shredded)
2 tablespoons almond flour
seasoning to taste (I use garlic salt)
1 (10-ounce) bag frozen broccoli rice (about 2 c.)
How to make Crispy Broccoli Cheddar Rounds (Keto & Low Carb)
Step 1: Following the package directions, cook the broccoli rice in the microwave. Drain using a fine strainer and squeeze out as much of the excess liquid. Set aside.
Step 2: Prepare the oven. Preheat it to 400 degrees. Using parchment paper, line a large baking sheet.
Step 3: Place the broccoli rice, shredded cheese, egg, almond flour, and seasoning in a bowl. Mix well until combined
Step 4: Shape the mixture into about 16 small balls. Place them on the prepared baking sheet, then slightly flatten each ball using your hands.
Step 5: Place the baking sheet in the middle rack of the oven and bake for about 15 minutes until the rounds begin to brown. Flip and continue baking for 8 to 10 minutes more.
Step 6: Remove from the oven when done and serve these Crispy Broccoli Cheddar Rounds by themselves or with a low-carb sauce if desired. Enjoy!

For this recipe, you can use broccoli rice, cauliflower rice, or a mix of both.
