Are you having a movie night? Have you figured out already what to eat? How about Chips and Crisp Cucumber Salsa? Oh, man, movie night will be awesome again if you serve this one! I first had this when I was in college. My roommate/best friend, Amanda, introduced me to this amazing recipe. Since then, it had become my favourite. I always make sure that I have it in my fridge! This salsa is so easy to make. All you need to do is to mix everything and you are good to go. No cooking or baking needed! How awesome is that? I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! By the way, feel free to add more ingredients to this if you wish. Ingredients:
2 c finely chopped seeded peeled cucumber
½ c finely chopped seeded tomato
¼ c chopped red onion
2 Tablespoon minced fresh parsley
1 jalapeno pepper, seeded and chopped
4-½ teaspoons minced fresh cilantro
1 garlic clove, minced or pressed
¼ cup reduced-fat sour cream
1-½ teaspoons lemon juice
1-½ teaspoon lime juice
¼ teaspoon ground cumin
¼ teaspoon seasoned salt
Tortilla chips
Directions:
Step 1: In a medium mixing bowl, add the cucumber, tomato, onion, parsley, jalapeno pepper, cilantro, and garlic. Stir until well combined.
Step 2: In another mixing bowl, add the lemon juice, sour cream, cumin, lime juice, and seasoned salt. Stir until well mixed.
Step 3: Transfer the second bowl into the cucumber mixture and toss until all the ingredients are coated completely.
Step 4: Serve with chips right away. Enjoy!
