Ingredients:
1 tablespoon olive oil
1-lb Italian sausage, casing removed
3 cloves garlic, minced
1 medium sweet onion, diced
2 teaspoons Italian seasoning
Kosher salt and freshly ground black pepper, to taste
2 tablespoons all-purpose flour
4 cups chicken stock
1 (8-oz) can tomato sauce
1 (9-oz) package refrigerated three cheese tortellini
½ bunch kale, stems removed and leaves chopped
⅓ cup heavy cream
3 tablespoons chopped fresh basil
Directions:
Step 1: Place a large stockpot on the stove and turn the heat to medium.
Step 2: Add olive oil and allow it to become hot.
Step 3: Add the Italian sausage and cook for 3 to 5 minutes or until crumbly and brown.
Step 4: Drain any excess grease, then add the onion, garlic, and Italian seasoning. Cook for 2 to 3 minutes or until soft and aromatic. Make sure to sprinkle salt and pepper to taste.
Step 5: Add the flour and whisk for 1 minute or until brown.
Step 6: Add the chicken stock and tomato sauce gradually. Make sure to whisk every addition, then allow the mixture to boil.
Step 7: Adjust the heat down to low and simmer the mixture for about 10 minutes. Make sure to stir from time to time until the texture becomes thick.
Step 8: Add the tortellini and stir until well combined.
Step 9: Cover the pot and cook for 5 to 7 minutes or until al dente.
Step 10: Add the kale and cook for 1 to 2 minutes or until wilted.
Step 11: Add the heavy cream and basil. Stir and cook for 1 minute. Add more salt and pepper if needed.
