Ingredients:
1 c orzo pasta
4 ounces roughly chopped baby spinach
2 c vegetable broth
1 c whole milk
1 c Parmesan cheese
½ teaspoon pepper or to taste
½ teaspoon salt or to taste
Directions:
Place a saucepan on the stove and turn the heat to medium-high.
Immediately add the milk and vegetable broth. Stir until well blended and allow the mixture to boil.
Add the orzo, then cook stir and cook for about 10 minutes or until done.
Turn the heat down to medium-low, then add spinach and Parmesan cheese. Stir and cook for 3 minutes or until the spinach has wilted completely.
Add salt and pepper to season.
Remove the pan from the stove, then sprinkle your preferred herbs on top to garnish.
Serve right away and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days. Reheat in a skillet with a bit of water.
