Ingredients:
Caramelized Onions:
2 tbsp olive oil
2 yellow onions large
¼ tsp salt
Creamy Pasta Sauce:
1 tbsp olive oil
8 ounces mushrooms (I used crimini mushrooms)
8 ounces spinach
1 c heavy cream
¼ tsp salt
9 ounces tortellini (I used 3-cheese tortellini, refrigerated)
¼ tsp black pepper when serving
Directions:
To Make the Caramelized Onions:
Step 1: Peel and slice the clean onions into thin slices.
Step 2: Place a large skillet on the stove and turn the heat to medium-high.
Step 3: Add in 2 tablespoons of oil and allow it to become hot.
Step 4: Add in the sliced onions and cook for 10 minutes while stirring from time to time.
Step 5: Adjust the heat to medium and cook for another 10 minutes until brown, then season with salt and pepper to taste. Make sure to stir from time to time to prevent the onions from burning.
Step 6: Reduce the heat to low and cook for another 10 minutes while stirring.
Step 7: Place the cooked onions on a clean plate and set aside.
To Make the Creamy Sauce:
Step 1: In the same skillet, add in 1 tablespoon of olive oil and allow it to become hot.
Step 2: Add in the sliced mushrooms and season them with a pinch of salt. Cook for 5 minutes or until soft. Make sure to stir occasionally.
Step 3: Add in the spinach and stir until wilted.
Step 4: Put the caramelized onions back to the skillet as well as 1 cup of heavy cream and ¼ teaspoon of salt, and then allow the mixture to boil.
Step 5: Reduce the heat and simmer for a couple of minutes while stirring occasionally.
Step 6: Meanwhile, cook the tortellini. Refer to the directions provided on the package. Drain and rinse.
Step 7: Toss the tortellini into the creamy sauce and simmer on low heat just until hot.
Step 8: Remove from the heat and sprinkle cracked black pepper on top.
Step 9: Serve and enjoy!
