Ingredients:
1 pound salmon
8 ounces uncooked penne pasta
3 tablespoons butter
1 medium onion (chopped)
8 ounces heavy cream
¾ c grated Parmigiano Reggiano
¼ c chopped parsley
salt and pepper
Directions:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until al dente. Drain and rinse with cold water to stop the cooking process.
Place a saucepan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onion and saute until translucent.
Add the salmon, then cook for about 5 minutes and crumble into small pieces.
Add the heavy cream, salt, and pepper. Stir until well mixed. Remove from the heat.
Add the al dente pasta, chopped parsley, and Parmigiano Reggiano. Toss everything until well mixed.
Sprinkle more cheese on top as well as freshly chopped parsley.
Serve and enjoy!
