This Creamy Potato & Hamburger Soup is a very comforting soup with loads of amazing flavors! It is super easy to make. You can throw this soup together either on your stovetop or crockpot. It is loaded with meat and veggies. You can even add toppings for another layer of goodness!
Ingredients
1 large garlic clove, minced
1 tablespoon butter
1 ½ lbs lean ground beef
1 medium white onion, peeled and diced
6 c. of chicken broth
2 c. of your favorite frozen vegetable mix
2 teaspoons dried parsley flakes
1 ½ c. milk
8 oz. Velveeta cheese, cubed
2 tablespoons cornstarch
½ c. sour cream
3 teaspoons dried basil
Salt & Pepper – to taste
6 c. of peeled & diced Russet potatoes
How to make Creamy Potato & Hamburger Soup
Step 1: Place the ground beef in a large skillet and lightly season with salt and pepper. Cook until the meat is no longer pink. Drain the grease when done and set aside.
Step 2: Melt the butter in a stockpot. Once melted, add the onion and cook until tender. Then, add the garlic and continue to cook for another 30 seconds to 1 minute. Next, pour in the chicken broth and add the potatoes, vegetables, basil, and parsley. Place the beef back into the pot.
Step 3: If making on the stovetop, let the soup simmer for about 10 to 20 minutes until the potatoes are tender and begin to slightly dissolve. Or if making in the crockpot, transfer all the contents of the stockpot into the crockpot and set it to cook for 6 to 8 hours on low or 3 to 4 hours on high.
Step 4: Mix the milk and cornstarch once the soup is done and stir this into the soup. Then, add the Velveeta, stirring often until melted. If making in the crockpot, you can set it to low. But if cooking on the stovetop, remove it from the heat before adding the Velveeta.
Step 5: Add the sour cream and stir well until blended. To taste, season with salt and pepper.
Notes:
You can add extra broth if you prefer a thinner soup. Add it a little at a time until you reached your preferred consistency.
Make sure to do this at the end.
If desired, you can also add toppings such as crumbled bacon, chives, jalapeños, and diced tomato.
For this recipe, the best to use is Russet potatoes. I do not recommend using red potatoes.
You can swap ground beef with ground chicken or turkey.
