A friend came over a few days ago and she shared her favorite salad recipe with me. Creamy Pineapple Fluff Salad is surprisingly one of the best salads I’ve tasted! It is made with jello, whipped topping, Pineapple gelatin mix, mallows, and one secret ingredient. A no-fuss salad recipe. All you need are to mix everything and serve right away or chilled. This salad is excellent for potlucks, parties, cookouts, and picnics. I never expected that I will enjoy every bit of this Creamy Pineapple Fluff Salad!
The marshmallows are totally optional but recommended. I would not dare to skip them because the kids love marshmallows! And the secret ingredient? Cottage cheese! You can use small or large curd. Cottage cheese gives texture to this salad and a layer of additional flavor. Trust me, cottage cheese in this salad makes everything better! This recipe is also very versatile. You can make it with different flavors like raspberry, and orange, or if you want less sweet, you try using a sugar-free jello mix. You can even make this salad in advance and simply chill it in the fridge. To serve, give the salad a good stir and you are good to go!
INGREDIENTS
16 ounces of 4% fat cottage cheese, small or large curd will work
3 ounces package of Pineapple gelatin mix, just the powder
8 ounces frozen whipped topping, thawed
1 c. mini marshmallows
14 ounces can Pineapple, drained
How to make Creamy Pineapple Fluff Salad
Step 1: In a large bowl, place the frozen whipped topping and Pineapple gelatin mix. Stir well using a rubber spatula until well combined, scraping the sides of the bowl.
Step 2: To the bowl with the frozen whipped topping and Pineapple gelatin mix, add the cottage cheese. Fold in until blended.
Step 3: Next, add the drained Pineapple followed by the mini marshmallows. Gently mix until everything is combined.
Step 4: Chill the salad in the fridge until ready to serve and enjoy it right away.
