Ingredients:
Pasta:
8 ounces penne pasta (for a gluten-free version, use gluten-free brown rice pasta)
Shrimp:
2 tablespoons olive oil (drained from sun-dried tomatoes jar or just use regular olive oil)
1-lb shrimp (without shells, and deveined)
3 garlic cloves minced
¼ teaspoon salt
Creamy Sauce:
4 ounces sun-dried tomatoes (without oil)
4 garlic cloves minced
1 c half and half
1 c mozzarella cheese shredded (do not use fresh Mozzarella, use pre-shredded Mozzarella)
1 tbsp dried basil (if using fresh basil, you can add more)
¼ tsp red pepper flakes crushed, add more to taste
⅛ tsp paprika
½ c reserved cooked pasta water (or more)
¼ tsp salt
Directions:
To Cook the Pasta:
Step 1: Refer to the directions provided on the package of the pasta noodles. Drain pasta and reserve about 1 cup of the pasta water.
To Cook the Shrimp:
Step 1: Drain the oil of the sun-dried tomatoes. Set aside 2 tablespoons of the oil.
Step 2: Place a large skillet on the stove and turn the heat to medium-high.
Step 3: Add the 2 tablespoons oil of the sun-dried tomatoes and allow it to become hot.
Step 4: Add the minced garlic and shrimp. Cook for about 1 minute or until golden brown and aromatic.
Step 5: Season with salt and pepper on each shrimp.
Step 6: Turn the shrimp and cook the other side for another minute.
Step 7: Remove the shrimp from the skillet and place them on a clean plate.
To Make the Creamy Mozzarella Sauce:
Step 1: In the same skillet, add the sun-dried tomatoes and additional minced garlic.
Step 2: Sauté for about a minute or until aromatic.
Step 3: Add half and half and allow the mixture to boil.
Step 4: Add in the shredded cheese and stir until well mixed.
Step 5: Reduce the heat to low and simmer the mixture until creamy. Make sure to stir from time to time.
Step 6: Add more half and a half of the reserved pasta water if the sauce becomes too thick.
Step 7: Add the paprika, crushed pepper flakes, and basil. Stir until well mixed.
Step 8: Add salt if needed. I only add about ¼ teaspoon.
To Assemble the Shrimp Pasta:
Step 1: Add the cooked pasta into the sauce and turn the heat up to medium.
Step 2: Add in the cooked shrimp and stir until well mixed with the rest of the ingredients. Add more salt and pepper if necessary.
Step 3: Reduce the heat to low and simmer for a few minutes or until the flavours are well blended.
Step 4: Serve and enjoy!
