I love all kinds of soup especially those that are light yet filling and require only a few readily available ingredients. My kids are always looking forward to falling because they know that mommy’s going to showcase my collection of delicious soup. I am delighted to know that my family is loving every sip and gulp of this lovely soup.
Ingredients:
1-pound mild Italian sausage
2 pounds Russet potatoes, diced
6 cups low-sodium chicken stock
3 cups chopped kale or spinach
1 cup heavy cream
½ cup Parmesan cheese, shredded
Kosher salt and black pepper, to taste
Olive oil, for garnish
Directions:
Step 1: Place a large stockpot or Dutch oven on the stove and turn the heat to medium-high.
Step 2: Add the Italian sausage and cook until greasy and crumbly.
Step 3: Discard the accumulated grease and place the sausage into a bowl.
Step 4: Put the sausage back to the pot. Add the potatoes, chicken stock, salt, and pepper. Allow the mixture to boil
Step 5: Simmer for 10 to 12 minutes or until the potatoes are soft and tender.
Step 6: Remove ½ of the soft potatoes from the pot and place them in a small bowl.
Step 7: Mash the potatoes and put them back into the pot.
Step 8: Add kale or spinach and heavy cream. Season with salt and pepper to taste.
Step 9: Cook for another 2 to 3 minutes or until the vegetables are soft.
Step 10: Remove from the heat and allow the soup to cool at room temperature for at least 3 minutes.
Step 11: Ladle into serving bowls and sprinkle Parmesan cheese and black pepper on top.
Step 12: Drizzle olive oil. Serve and enjoy!
