This simple pea salad features soft, crunchy onion pieces combined with creamy Cheddar cheese bits. Growing up, a family friend made us this pea salad that we all love to this day. They ‘re all normal things: peas, mayonnaise, egg, cheese, and onion. Amid all the other dishes vying for attention during one of our family gatherings, the one I recall most was a delightful pea salad with big chunks of cheese, raw onion, and a sweet, creamy dressing. I just don’t want to think about how many metric tons of things I’ve had to eat over the years, but I loved it and still love it as much as I do today. It is a fun, easy salad that is perfect for any spring or summer gathering but is especially nice for Easter as it bursts with beautiful green peas. Ingredients:
(3) (14.5 oz) cans Green Giant Sweet Peas-Cnd PLB
(3) Egg, whole, cooked, hard-boiled
¾ cup Cheese, cheddar
(⅔) a cup of salad dressing, a combination of mayonnaise and
soybean oil, with salt
½ cup Onions, raw
(1) pinch Salt, table
Directions:
Mix the sweet peas, eggs, Cheddar cheese cubes, mayonnaise, and onion until ingredients are coated in mayonnaise in a bowl, add and season with salt and pepper.
Note:
If you prefer, you can use frozen peas instead of canned green peas. It is not dangerous to use frozen peas, and when you cook frozen peas you’re just warming them up.
