The combination of sausage, cream cheese, tomatoes, and a lot more, made this Creamy Crockpot Tortellini a total comfort food! Almost 3 hours of cooking time is so worth it, I’m telling you! I learned about this recipe a couple of years ago, and I’m still in love with it to this day! Here you go! I have listed all the things you will be needing. Just follow them step by step, and you are good to go!

Ingredients:
8 oz. cream cheese, cubed
3 c chicken broth
¼ c tomato paste
½ small onion, diced
16 oz. frozen tortellini
1 tsp Italian seasoning
28 oz. canned diced tomatoes with juice
1 lb. Italian Sausage
¼ c Parmesan cheese optional
3 oz. frozen spinach
Directions:
Place a skillet on the stove and turn the heat to medium.
Add the sausage, then cook for a few minutes until crumbly and brown.
Add the onion, then sauté for a few minutes until translucent. Discard any accumulated grease.
Transfer the sausage into a 6-quart slow cooker.
Add the spinach, tomatoes, Italian seasoning, frozen tortellini, tomato paste, cream cheese, and chicken broth into the slow cooker. Stir everything until well combined.
Cover and seal the slow cooker, then cook everything for about 2 ½ hours to 3 ½ hours on a low setting. Stir once again until well blended.
Top each serving with Parmesan cheese.
Serve and enjoy!
Notes:
Add more broth if you want more soup.
