Ingredients:
2 tbsp olive oil
1 tbsp unsalted butter
2 red bell peppers, chopped into chunks
3 cloves garlic, finely diced
⅓ c (80ml) low-sodium vegetable broth
1 lb. (450g) large shrimp, peeled and deveined
1 tbsp fresh parsley, chopped
14 oz. pork or chicken sausage, sliced
1 small yellow onion, diced
2 tbsp Cajun seasoning
1 tsp salt and pepper
1 ¾ c heavy cream
½ c grated Parmesan, optional
Directions:
Add sausage and shrimp into a large mixing bowl.
Add Cajun seasoning and olive oil over the sausage and shrimp, then toss until well coated.
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add the sausage and shrimp, then cook for about 5 minutes or until brown. Transfer them onto a clean plate.
Add butter into the same skillet and allow it to melt.
Add the onion, then sauté for a few minutes until soft.
Add the bell peppers, then sauté for a few minutes as well until soft.
Add the garlic, then sauté for a minute or until aromatic.
Add vegetable broth, then scrape the bottom of the skillet to get the browned bits. Stir until well blended, then simmer for a few minutes until the volume of the sauce reduces.
Turn the heat down to low, then add heavy cream and stir until well blended. Bring the mixture to a simmer. Taste and add more salt and pepper if needed.
Add Parmesan cheese, then stir until well mixed. Simmer the sauce for a few more minutes.
Put the sausage and shrimp back into the skillet, then toss until well coated by the delicious sauce. Remove from the heat.
Sprinkle freshly chopped parsley on top to garnish.
Serve over rice, pasta, or steamed veggies. Enjoy!
