Ingredients:
8 ounces of cream cheese
¼ Parmesan cheese, finely grated
1-2 cloves garlic, minced
1-pound baby Bella or cremini mushrooms
Kosher salt and freshly ground black pepper, to taste
1 tbsp fresh parsley, finely chopped and divided
½ tsp dried thyme
2 tbsp butter
Directions:
Prepare the oven and preheat it to 200 degrees C or 400 degrees F. Line parchment paper to the inside of the baking sheet.
Use a damp towel to wipe clean the mushrooms.
Cut the stems and chop them finely.
Place the mushroom caps onto the prepared baking sheet and arrange them in a single layer.
Place a skillet on the stove and turn the heat to medium-high. Add butter and allow it to melt.
Add the chopped mushroom stems, then sauté for about 5 minutes or until soft.
Add the thyme and garlic, then sauté for about a minute or until aromatic.
Add salt, pepper, cream cheese, and ½ of the Parmesan cheese. Stir until well blended. Simmer the mixture for a few minutes.
Remove the skillet from the stove, then add the parsley and stir until well blended. Allow the mixture to cool.
Transfer the mixture into a piping bag, then remove the tip.
Pipe the mixture into the prepared mushroom caps making sure to fill them up.
Sprinkle the rest of the Parmesan cheese on top.
Place them in the preheated oven and bake for about 15 minutes or until the top turns golden brown.
Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
