The flavours of this Stuffed Chicken are superb! Make sure to add a generous amount of cheese. Just do it and thank me later!
Ingredients:
4 ounces ⅓ less fat cream cheese, softened to room temperature
1 tbsp minced fresh parsley
1 tbsp minced fresh dill
1 tbsp minced fresh chives
2 garlic cloves, minced
4 6 ounces each boneless, skinless chicken breasts, (24oz total)
Salt and black pepper
1 tbsp olive oil
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Line with parchment paper a baking sheet.
Step 3: In a medium mixing bowl, add in the cream cheese, chives, garlic, dill, and parsley. Mash until well combined.
Step 4: Slice the chicken breasts from the sides and open each breast from the slit.
Step 5: Spread the cream cheese mixture on each chicken breast. Make sure to leave the other half empty for the filling.
Step 6: Fold each chicken breast to make stuffed breasts.
Step 7: Season each stuffed breast with salt and pepper.
Step 8: Place a large skillet on the stove and turn the heat to medium-high.
Step 9: Add in oil and allow it to become hot.
Step 10: Add in the stuffed chicken and cook for 1 to 2 minutes until the bottoms are seared. Make sure not to overcrowd the skillet.
Step 11: Flip the chicken breasts and cook the other side for another minute.
Step 12: Place the seared chicken breasts into the prepared baking sheet.
Step 13: Place it inside the preheated oven and bake for 30 minutes or until done.
Step 14: Remove from the oven allow it to cool at room temperature.
Step 15: Serve and enjoy!
