Ingredients:
1 ½ lb. peeled crawfish tails
¼ c all-purpose flour
3 c half-and-half cream
1 onion, chopped
6 tbsp butter
1 tsp Worcestershire sauce
2 c chicken broth
1 pinch cayenne pepper, or to taste
1 tsp salt
Directions:
Place a large pan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the onion, then sauté until caramelized. This usually takes about 8 minutes.
Add the flour, then whisk and cook for a minute to remove the raw taste.
Add the chicken broth, then stir until well blended.
Add the crawfish tails, salt, half & half, cayenne pepper, and Worcestershire sauce. Stir until well blended.
Turn the heat down to medium-low, then simmer for a few minutes until the texture of the sauce becomes thick.
Remove from the heat.
Serve warm and enjoy!
