Ingredients:
¼ c minced shallots
1 c peeled, chopped tart green apples
½ c chicken stock
⅓ c dried cranberries
1 boneless pork loin (about 3 to 4 lbs.)
½ c panko or homemade breadcrumbs
1 tsp minced rosemary
2 tbsp pure maple syrup
⅓ c chopped walnuts, toasted
Sea salt and freshly ground pepper
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Lay the pork onto a flat surface, then create a pocket-like slice in the middle.
Cover each with plastic, then use a meat mallet to gently pound the meat.
Season with salt and pepper, then rub each until well coated.
For the Filling:
In a mixing bowl, add the and stock and Panko crumbs. Stir until well blended.
Add walnuts, shallots, cranberries, rosemary, apples, and maple syrup. Stir until well blended.
Add the filling on top of each pork, then spread it evenly
Roll each, then use kitchen strings to tie each roll.
Place them inside the preheated oven and roast for about 15 minutes or until done.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Slice into even pieces.
Serve and enjoy!
