This recipe has always been a part of my life since I was a kid. My Grandma used to make this breakfast casserole all the time! I loved waking up to the incredible smell of this dish. Now, I get to do the same thing for my kids. Oh, man, you are so in for a treat! Try this recipe now, and I promise you that it will be worth all your time and effort. Enjoy!
Ingredients:
2 lb. bacon
1 (30-32oz.) bag frozen tater tots
1 (1-oz.) package Ranch Salad Dressing & Seasoning Mix
2 c shredded cheddar cheese
8 Eggs
2 c milk
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Place a large skillet on the stove and turn the heat to medium.
Add bacon and cook until crispy.
Place the bacon on a clean plate lined with paper towels to drain any excess grease, then chop them into small pieces.
Add the chopped bacon as well as the tater tots and cheeses into a large mixing bowl. Toss until well combined.
Transfer the mixture into the prepared baking dish and spread it evenly.
In another mixing bowl, add the Ranch mix, milk, and eggs. Whisk until well mixed.
Pour the mixture on top of the tater tot mixture and spread it evenly.
Place it inside the preheated oven and bake for about an hour or until done.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve warm and enjoy!
Notes:
Feel free to use turkey bacon for this recipe.
You can make this in advance, then place it inside the fridge or freezer.
Cover with foil and reheat for 30 minutes at 350 degrees F.
