Ingredients:
1 medium onion, diced
3 cloves garlic, minced
1 ½ lbs. ground beef, 80/20
2 (12 oz.) package kielbasa sausage, cut into ½-inch slices
4 slices bacon, chopped
3 tbsp all-purpose flour
2 (16 oz.) cans of baked beans, with liquid
1 (14.5 oz.) can petite diced tomatoes, with liquid
1 tsp chilli powder
2 medium russet potatoes, peeled and cut into ½-inch cubes
1 (7 oz.) can of chopped green chillies, with liquid
2 tbsp parsley, chopped
1 (15 oz.) can sweet corn, with liquid
1 c water
1 ½ tsp salt
½ tsp black pepper
Directions:
Place a skillet on the stove and turn the heat to heat to medium.
Add the bacon and cook until crispy. Remove from the skillet and transfer onto a clean plate lined with paper towels to drain excess grease.
In the same skillet, add the sausage. Cook until crumbly and brown. Remove from the skillet and transfer onto the plate with the bacon.
In the same skillet, add garlic, beef, and onion. Cook until brown and soft.
Add chilli powder, flour, salt, and pepper. Stir until well mixed and simmer for a minute.
Add the baked beans, green chilis, potatoes, tomato slices, sweet corn, water, sausage, and bacon. Stir until well combined.
Allow the mixture to boil, then turn the heat down to low.
Cover the skillet and simmer the stew for about an hour. Make sure to stir from time to time.
Sprinkle freshly chopped parsley on top.
Serve and enjoy!
Note:
Add more water if the texture of the stew is too thick.
