Ingredients:
4 slices bacon, chopped
2 (12-ounce) package kielbasa sausage, cut into ½ inch slices
1 ½ pounds ground beef, 80/20
1 medium onion, diced
3 cloves garlic, minced
3 Tbsp all-purpose flour
1 ½ tsp salt
½ tsp black pepper
1 tsp chilli powder
1 (14.5-ounce) can petite diced tomatoes, with liquid
2 (16-ounce) cans baked beans, with liquid
1 (7-ounce) can chop green chillies, with liquid
1 (15-ounce) can sweet corn, with liquid
2 medium russet potatoes, peeled and cut into ½ inch cubes
1 c water
2 tbsp parsley, chopped
Directions:
Step 1: Place a large pot on the stove and turn the heat to medium.
Step 2: Add in the bacon and cook until crispy.
Step 3: Place the cooked bacon on a plate lined with paper towels to drain any excess grease.
Step 4: Add the sausage into the pot and cook both sides until brown.
Step 5: Place the cooked sausage on the plate with the bacon.
Step 6: In the same pot, add in the beef, garlic, and onion. Cook until brown and aromatic.
Step 7: Add in flour, chilli powder, salt, and pepper. Stir until well combined.
Step 8: Add in the sliced tomatoes, green chillies, sweet corn, baked beans, sausage, bacon, and water. Allow the mixture to boil.
Step 9: Reduce the heat to low and simmer for 1 hour while stirring from time to time.
Step 10: Remove from the heat.
Step 11: Sprinkle fresh parsley on top of each serving. Enjoy!
Note:
Make sure to add more water if the texture of the stew is too thick.
