Ingredients:
1 ½ c vegetable oil
4 boneless skinless chicken breasts
Buttermilk Marinade
3 tsp salt
2 c buttermilk
2 large eggs, whisked
Breading
½ c breadcrumbs, plain or Italian
¾ tsp paprika
1 ½ tsp black pepper
1 ½ c all-purpose flour
2 ½ tsp seasoned salt
½ tsp cayenne pepper
Directions:
To Prepare:
Use paper towels to pat dry the chicken.
Wrap each chicken with plastic, then use a meat mallet to gently pound each into ½-inch-thick pieces.
In a mixing bowl, add the buttermilk, salt, and eggs. Beat until well blended.
Add the chicken pieces into the bowl with the buttermilk, then toss until well coated. Place it inside the fridge and marinate the chicken for at least an hour or two.
Prepare the mashed potatoes and gravy.
For the Chicken:
Remove the chicken pieces from the marinade into a bowl with the breading mix. Coat each well and shake off any excess.
Place a skillet on the stove and turn the heat to about 350 degrees F.
Add oil and allow it to become hot.
Add the chicken and cook each side for about 5 minutes or until they turn golden brown.
Transfer the chicken onto a clean plate lined with paper towels to drain excess oil.
Allow the chicken to rest for a few minutes at room temperature.
Serve with the prepared gravy and mashed potatoes. Enjoy!
