Ingredients:
Canola or vegetable oil for frying
1 ½ c yellow cornmeal
1/ 2 tsp garlic powder
2 to 3 tbsp all-purpose flour
3-4 c fresh okra or thawed okra from frozen, cut into 1/ 2-inch round slices
1 Egg, beaten
½ tsp pepper
1 tsp salt
Directions:
Prepare the okra by removing the tips and stems. Slice, then rinse with water.
Use paper towels to pat dry the okra.
Sprinkle flour over the okra, then toss until well coated. Shake off to remove any excess.
In a mixing bowl, add the cracked egg and whisk until smooth.
Add the okra into the bowl with the beaten egg, then toss until well coated.
Add garlic powder, salt, cornmeal, and pepper in a resealable bag.
Add 1 cup of the okra inside the bag, then shake it until well coated. Repeat the process with the rest of the okra.
Place a frying pan on the stove and turn the heat to medium-high.
Add enough oil and allow it to become hot.
Add the okra in batches, then cook each side for about 2 minutes or until done.
Transfer the okra onto a clean plate lined with paper towels to drain any excess oil. Repeat the process with the rest of the okra.
Serve right away with your preferred dipping sauce. Enjoy!
Note:
I like serving these fried okras with ketchup and ranch dressing.
